Happy New Year, everyone! Boise saw a lot of change in the restaurant industry in 2024, and that appears to be a trend going into 2025. Right now, we are expecting a lot of expansion in the restaurant space, with brand new places coming in and existing restaurants expanding their footprint.
Here’s what we are most looking forward to.
Hemlock
This restaurant is taking over the space currently held by Richards at the Inn at 500. Chef Richard Langston and his wife announced last year that they would be retiring, but would be staying on to lend his expertise at the start.
The boutique steakhouse is set to open in the Spring. Scott Slater and Todd Ketlinski, who opened Spitfire Tacos + Tequila in Eagle, say they are “poised to redefine the steakhouse experience.”
Hemlock will also take over catering and banquet services at the Inn at 500. A menu is not listed on the restaurant website yet, but it teases things like striking design, a lively bar and “Brunch with Beats.”
Corso Italian Steak
Corso Italian Steak is opening where the Jalapenos on Broadway used to exist. The owners of Jalapenos closed that location, choosing to focus on their family and the two other locations.
The minds behind the James Kitchen & Bar is also behind that of Corso, which will offer an upscale Italian steakhouse experience. A speakeasy will also be added, with an entrance on the back of the building.
There is still no opening date for the restaurant, but the website has the following under its service description: “Delight in a premium steak experience at Corso Italian Steak. Enjoy our carefully curated menu featuring prime cuts cooked to perfection in an upscale casual setting. Make your reservation today for an unforgettable dining experience.”
Rosa
A new taco joint is coming to Garden City in 2025. Rosa is described as a fast-service taco restaurant and will be located at 214 E. 34th Street.
The owners are the Wylder Hospitality Group and it will be their sixth restaurant in the area. According to BoiseDev, the space has two large garage doors, a door connecting it to Push and Pour and a small patio.
The restaurant should be open in February.
Oldspeak Bar
This one is not so much of a restaurant, but definitely one for the readers in Boise to take note of. From the owner of The Lit Room in Garden City, Oldspeak Bar will be a beer bar that will be a home to a variety of books and readers.
Oldspeak Bar is currently under construction in the former Twisted Ewe building. The bar menu will include beer from Alliteration Ales, as well as guest taps and tea and coffee.
According to The Lit Room on Instagram, Oldspeak Bar should open in early 2025.
Pig Latin
A new restaurant with a Latin twist is coming to Eagle later this year. The owners already have a location in Elk Grove, California but they told BoiseDev that the Eagle location will be the main location.
Pig Latin will focus on entrees, such as steak and seafood, as well tacos and shared plates. The restaurant will also have drinks that blend classics with “unexpected” flavors, like a prickly pear margarita.
The restaurant space has a large patio area overlooking the Boise River. The new owners say there will be a glass patio cover so customers can sit comfortably outside year round.
Pig Latin should open in September.
